It’s been months in the making. I have been honing (pun intended) my knife sharpening technique in pursuit of the ultimate goal of a mirror edge which is “shaving sharp.” This morning I got the final two ingredients in the mail: a 5000-grit Japanese water stone and a leather strop. The result is a terrifyingly sharp knife that you could literally dry shave with (I tried). I’m thinking of supplementing my resident’s salary with a knife sharpening business.
